FAQ’s

We curate our selection depending on the season and availability, similar to our menu in Fabus.
In the warmer months we try to offer easier wines, lower in alcohol and body, more suited for a nice day on the terrace, whilst in the colder months we go towards fuller, richer wines to keep you warm and cozy. The main focus of the boxes is on still wines, but sparkling wines will also be included in our selection.
If you are specific about your preferences and would like to make sure you receive exactly the kind of wine you desire, leave nothing up to the chance, come and visit us…

Our wine selection is based on what is known as “natural” or “low intervention” wines. They are by default organic but not necessarily certified. Some of them can be biodynamic.
-
Since a low-intervention approach to winemaking is not the most commercially viable, the vast majority of our selections tends to come from small, independent winemakers.
Our main criteria when making the selection is craftsmanship and authenticity.

In short lines, we can define natural wine as wine made from grapes grown without chemicals (synthetic herbicides and pesticides) and with minimal intervention in the winemaking process (no additives and limited filtration). There is a consensus about the maximum level of sulfites (preservatives) natural wines can have, but there is so much more about it than just the sulfite levels.
Organic wine, on the other hand, is similar in the winegrowing process, but is not required to follow the same approach in the winemaking process.
Biodynamic, on top of the organic approach, also takes a holistic approach to agriculture and views the farm as a self-sustaining system and follows the lunar and celestial rhythms.
