Biodynamic Slovenian skin contact wine. Cuvée of seven different varieties that all grow in the same vineyard so they can pollinate one another. The same philosophy is used for harvesting – all seven sorts are harvested and macerated together so Zaria can become a perfect harmony.
Zaria is macerated with no temperature control for 30 days and fermented with indigenous yeasts in open barrels. It matured in Slovenian oak barrels and was bottled without any filtration, with no SO2 added.
All parts of the vineyard works and the winemaking process were done under a certain phase of the moon, following the biodynamic principle. The wine is heavily influenced by the new moon and therefore it stays young, fresh and deep. This beautiful wine that can be drunk on its own.
